Open-Faced Egg Sandwich with Greens and Manchego

A tasty way to add that extra serving of greens to your day—great for breakfast or a quick lunch.

Toast your favorite multi-grain bread. Heat some butter in a large skillet. Throw in a couple handfuls of baby spinach, arugula, or kale. Sauté the greens until just tender; season with salt and pepper, and move them to the side of the pan. Fry your egg over-easy. Once you turn the egg, remove the greens from the pan and arrange them on the toast. Grate some cheese over the warm greens. Place the egg on top, grate more cheese, season with salt and pepper, and enjoy!
